It can be hard to eat properly working some of the gruelling hours we do especially when there’s nobody else to cook it for you so today I got up extra early to spend a little time making a good breakfast for one.
Eggs Benedict for one ingredients:
- 2 eggs
- 2 egg yolks
- 125g butter, cubed
- 2 slices fried prosciutto, ham or bacon
- 1 English muffin sliced in half
- Half a lemon
- A few fresh chives
- 1tsp white wine vinegar
- 3tsp cold water
- Pinch cayenne pepper
- Salt to season
Start by melting the butter and clarify/ skim off the white fats, set aside and keep warm then set up a Bain Marie ( a metal or glass bowl sat on top of a pan of simmering water.) Proceed to add the egg yolks, vinegar, water and salt to the Bain Marie. Meanwhile gently fry your prosciutto and toast the muffin slices. Continue whisking the yolk mixture until it is pale and thick, you may add water to thin if desired. Once thickened whisk in the clarified butter and squeeze the juice in from your lemon. To finish the sauce add the salt and cayenne pepper, keep it warm while you quickly poach to eggs, I like to add vinegar to the pan and stir it to create a vortex which I quickly drop the egg into, this helps it hold a good shape. Once your eggs are cooked it’s time to plate. First the muffin slices then add the prosciutto, then eggs and finally finish with the hollandaise and chopped chives.
