Spaghetti of Spinach and Parsley with Crab.

Another pasta dish, this time I have incorporated spinach and parsley into my dough to create a beautifully vibrant green noodle, at the same time the parsley itself will marry nicely with the crab meat. This is another amazing example of what you can do with a bit of egg and flour, it never ceases to amaze me.

Ingredients (serves 4):

  • 1 egg
  • 200g tipo 00 flour
  • 100g spinach
  • A handful of flatleaf parsley
  • 200g crab meat, white and brown
  • A knob of butter
  • Salt and pepper to season

Get straight on with your pasta dough by boiling your spinach and parsley thoroughly in a saucepan, once cooked through drain it off and pat as dry as you can get it, now in a food processor puree the greens then mix in the flour and egg. Once combined you can remove the mixture from the processor and knead on a floured surface, do this for 10 minutes until the dough is nice and springy, you may need to continue dusting if the dough is still a little wet. Rest your dough in the fridge for half an hour or overnight if you are making it in advance.

 

Get out your pasta machine and like we have done many times before begin to work the dough through the machine, starting on the thickest setting going through each one twice until you reach the third thinnest setting. With that done using the spaghetti attachment on your machine feed the pasta through it in long strips to make your noodles. Whilst you finish making the noodles boil a pan of water ready to cook them and begin to gently pan fry your crab meat with the butter, salt and pepper, you could add a little lemon juice to bring the dish to life as well. Boil your pasta for about 60 seconds, strain off and toss it through with the crab meat, dish this up and finish with some chopped parsley and a little olive oil.
